Prawn Noodles

Today’s recipe brings some Asian flavors to your table, inspired by a very famous Korean noodle dish (Japchae,잡채). This dish of slightly spicy prawns with delicious noodles, crunchy vegetables and some other treats makes a perfect dinner.

What you’ll need:

Main ingredients

  • 300-400g noodles of your preference
  • 150-200g raw prawns
  • 1 handful of spinach
  • 1 medium carrot
  • ½ medium brown onion
  • About 100-150g shiitake mushrooms

To season the spinach

  • Pinch of salt
  • 1 garlic clove, grated
  • 1 tsp sesame oil

For the prawn marinade

  • 1 Tbsp soy sauce
  • 1 tsp mirin
  • 1 garlic clove, grated
  • Generous pinch of black pepper
  • 1 tsp red pepper flakes
  • 1 tsp sesame oil

For the mushroom & noodles marinade

  • 4 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • 1 Tbsp honey
  • 1 Tbsp sesame oil
  • Pinch of black pepper
  • 1 small chili, minced

To garnish

  • Sesame seeds
  • 1 egg, yolk and white separated

 

Method:

  • Start by preparing the marinade for your prawns. Mix all the ingredients together pour it over the prawns. Let it marinate for about 30 minutes while you get everything else ready.
  • Now mix all the ingredients for the noodle and mushroom marinade. Chop your shiitake mushrooms thinly, removing the stems as they can be a little hard. Pour one and a half tablespoons or so of the marinade over the mushrooms and mix it all together. Let it sit while you do the rest of your tasks. Reserve the rest of the marinade.
  • Cook your noodles as per packet instructions. Once they are cooked, drain well and pour the rest of the marinade over them.
  • Now chop your carrot into matchsticks and the onion into half moons.
  • Add a little cooking oil to a large skillet or a wok. Beat the egg white and once the wok is warm, pour it on it. Fry it like a pancake and flip halfway through. Once it’s done, remove it from the wok and do the same to the egg yolk. Save both in a dish for later.
  • Now sauté the spinach until it starts getting tender, but still slightly crunchy. Remove it and season it in a bowl with the garlic, pepper and sesame oil. Keep it aside for now.
  • Sauté the onions until slightly tender and keep them aside too. Then sauté the carrots – they will take a bit longer than the carrots, so make sure they are cooked but still a little bit crunchy.
  • Now sauté the prawns, making sure some marinade goes along but not too much. Once your prawns are cooked, remove them as you don’t want them to be rubbery and chewy.
  • Lastly, sauté the mushrooms with some of the marinade. Once they are cooked, add in the noodles and combine everything together until the marinade coating slightly thickens.
  • Turn off the heat and add the carrots, onions, prawns and the egg whites (chopped into matchsticks). Mix everything together.
  • Get a large bowl and place your noodles with all the components. Garnish with the spinach and with your egg yolk (chopped into matchsticks). Sprinkle some sesame seeds and a little more sesame oil if you’d like.
